An interesting question, and "why" is something that requires some introspection. Chet Atkins is probably the most talented, though I don't care as much for that style. Hendrix is a classic for all of his innovation and raw talent.

Prog rock, though, is my favorite style of music. I was just on a cruise with Yes, Steve Hackett (Genesis), Martin Barre (Jethro Tull), Adrian Belew (King Crimson), Bumblefoot (new band Sons of Apollo played their first live concerts) along with other bands playing at least twice over the course of the cruise.

After consideration, my favorite would be Steve Howe of Yes, with Steve Hackett of Genesis a close second. Not only talented but tasteful, with emotional impact.

PS, from reasonably close it looks like Bumblefoot was using a Fractal Audio AX8.

Like Jefsummers, there are many options.
Out of the pack ... Jeff Beck, Pat Metheny, Wes Montgomery, Steve Lukather, Larry Carlton, Robben Ford and a few more that make up my A-list!

That's a great list.  Beck's at the top of mine, now at 73 he's an inspiration for me on the 'back nine' of my playing career.  Gary Moore is my all time fave.  You can just pick a random album and he's schooling you on something - metal, blues, prog rock, wherever his muse took him at that moment.  Always with a monster tone and fry-your-face-off conviction.

Try as I might no one guitar player is my favorite, notables are Frank Zappa, Guy Clark, Roy Clark, Atkins, Doc Watson, Kottke, Belew, Methany, Holdsworth, Montgomery, Roy Smeck, Glen Campbell randomly mentioned all greatly envied.  And anyone that plays better than me which is pretty much everybody.... :D

My whole life this has been a question that could never be answered.
BUT, the really good thing about that is that is shows how diverse the world of guitar playing really is. Its just so... BIG. There is so much, so many different kinds, and they all begin with beating your fingers up on that F bar chord...
